Radeon RX 570 is built on the Polaris GPU architecture from AMD and is the second-fastest graphics card after Radeon RX 580 in the Radeon RX 500 graphics card series. The card comes with 2048 Stream Processors which is just 256 SP short compared to the Radeon RX 580.
GeForce GTX is built on the Pascal GPU architecture from Nvidia and comes with 1152 / 1280 CUDA Cores for 3GB/6GB variants. When it comes to cryptocurrency mining then Radeon RX 570 is certainly a much better graphics card compared to GeForce GTX 1060.
When it comes to power consumption then GTX 1060 is clearly a winner. GeForce GTX 1060 has maximum power consumption of 120W and requires 400W PSU for its working. On the other hand, Radeon RX 570 has maximum power consumption of 150W and requires a 450W PSU to work with.

Well, both these mid-range graphics cards are very good for 1080p gaming and other graphical tasks. Radeon RX 570 is a bit hard to find and its price has gone up because of the boom in cryptocurrency mining these days. GeForce GTX 1060 is an all-rounder that packs performance, has lower power consumption, and is also a lot cheaper than the RX 570. So my pick here would be the GeForce GTX 1060 for gaming.
